Super Gooey Chilli Chocolate Brownies with WalnutsThis “healthy” recipe makes a simple tray of delicious gooey brownies made with “wholemeal” flour! I know a chocolate brownie made with wholemeal flour…it’s got to be healthy right! Let’s not kid ourselves with the healthiness, these decadent brownies will make your mouth water. The darkness of the chocolate bears unusual dreaminess, it is believed that chocolate is an aphrodisiac by lifting up the mood, triggering happiness experienced through the senses. Although this claim lacks actual proof you won’t know until you have tried my chocolate laced chilli brownies it will be enough to create heat in anyone, so why not share it with someone you love and allow the superpowers of chilli work its magic.

190g of rich, dark, good quality chocolate (70% cocoa is perfect)
200g of caster sugar
50g of vanilla sugar
190g of sea salt butter (ideal at room temperature)
115g of wholemeal flour
65g of walnuts
3 eggs
A dash of vanilla essence
A dash of red chilli flakes


Grease a baking tray with softened butter.
Break up the chocolate into small pieces and cut the butter into small chunks and place in a heatproof bowl along with the dried red chilli flakes.
Place the bowl over a saucepan with a small amount of simmering water ensuring the bowl does not touch the water.
Stir the melted chocolate well to ensure that it is completely smooth and glossy releasing subtle scents of chilli.
In a mixing bowl, break the eggs into the sugars and add the vanilla essence, mix thoroughly.
Add the melted chocolate mixture and walnuts and stir again.
Finally, stir in the flour.
Pour the rich, chocolaty mixture into the tray and spread evenly.
Bake in the oven for about 20-25 minutes on 180ºC until the top has gone golden brown, but the centre is still wet and gooey.
The brownies will solidify over time, to keep them moist, wrap each slice individually in cling film.
