Shopping List:

300 grams wholemeal flour
225 grams brown sugar
115 grams unsalted softened butter or margarine
100 grams coarsely chopped walnuts
60 ml milk
3 medium-sized bananas, chunky or mashed (to your preference)
2 large eggs
1 teaspoon vanilla essence
1 teaspoon baking soda
½ teaspoon salt

Preheat the oven to 180°C/ Gas mark 4/ 350°F. Line the bread pan with greaseproof paper, leaving enough greaseproof paper to hang over the sides. Using melted butter, brush the inside of the pan.

In a large mixing bowl, combine the softened butter and sugar until light and fluffy.

Next, add in the eggs and whisk until the mixture is smooth and mixed thoroughly.

Whisk in the milk and vanilla essence into the batter. Once combined add in the bananas either in chunks or mashed as you prefer and using a wooden spoon, mix them into the batter.

Once the banana is blended nicely into the batter add in the flour, baking soda, and salt. Using the wooden gently stir until there is no more flour visible. Lastly, add in the walnuts and gently fold them in.

Pour the batter into the pan and bake in the oven for 50 to 60 minutes, until the top of the cake is caramelised and crisp and the inside is nice and fluffy.

Allow to cool for 10 minutes and remove the loaf using the excess greaseproof paper and enjoy!
