Who is a huge fan of cauliflower? I am. I know a few people who think cauliflower should be non-existent just like aubergines, but they are versatile vegetables that are kitchen must haves! You can always count on me being the last one sat on the dining table finishing off my greens.

If you have a bit of time, I recommend roasting or slowly steaming cauliflower with a fragrant curry paste as it is a 100% guarantee to deliciousness with lots of umms and ahhs. A simple roasted or steamed cauliflower dish is great but like me and if you’re looking for something with more of a kick, then using my curry paste is perfect and will take you to new realms of flavour. It softly spices the cauliflower and releases tonnes of flavour with every bite, which reminds me a bit like my grandmas afternoon quick curries during the summer holidays.

So if you’re in the mood for an abundance of flavour then you must try this sensational cauliflower curry, it’s top marks for me in the vegetable world of curry.


150 grams green beans
200 grams small cauliflower and Romanesque cauliflower cut into bite-size pieces
2 tablespoons easy home-made Gujarati curry paste
1 tablespoon water
1 tablespoon olive oil
A small handful of fresh coriander to garnish


Heat the olive oil in a large, heavy based frying pan over a medium heat.

Once hot add in the curry paste and the tablespoon of water and simmer for 2 minutes.

Add in the green beans and cauliflower, stir well, cover and simmer for 15-20 minutes.

Once cooked, eat hot, garnish with coriander and enjoy!
