For me, a salad is a great source of a healthy accompaniment to any dish. Salads are colourful and zesty, the dressing makes the perfect seasoning and the best part watching the olive oil slowly drizzle itself over the crunchy tomatoes leaving no seasoning prisoners.
So, what do you say? Do you want to kick start your perfect salad? Or is it just me that finds poetry in making salads? Poetry aside, I have had the best salads throughout Spain, in no-nonsense cafes and restaurants that only serve produce from the province. Salads are quite humble, but with quality ingredients, they are spectacular with an explosion of flavour. But like me, I sometimes have cravings for strong spicy flavours and to enjoy a salad to whet my appetite only means one thing…fresh, zesty lime! This salad is the bee’s knees of deliciousness so why not get started.
200 grams variety of colourful tomatoes, cut into halves
½ red onion, finely sliced
1 ½ tablespoons extra virgin olive oil
Juice of 1 lime
Freshly ground salt and pepper to season
A small handful of fresh coriander, roughly chopped
A small handful of fresh parsley, roughly chopped
Soak the sliced onions in cold water for 10 minutes.
Drain the onions in a colander, place into a salad bowl and the tomatoes.
In a separate bowl, make the salad dressing, add in the chopped coriander and parsley. Sprinkle freshly ground salt and pepper over the herbs and drizzle with olive oil and the lime juice.
Vigorously hand whisk the dressing until combined and pour over the salad.
Gently mix the salad using wooden spoons and set aside at room temperature until serving.
