When summer rolls around, which we all love, we only ever consider, cold, refreshing soups. Soups that quench your thirst and cool you down from head to toe. Summer soups are normally the best, you spend less time in the kitchen and they are normally the soups which you can make in a blender and refrigerate overnight for that cool feeling.

Summer is an indulgent time of year, delicious seafood, holidays by the sea and delectable foods but what I actually crave is something that provides balance, nourishment and freshness. For me, it’s soup bowls filled with various combinations of colourful, crisp vegetables drizzled with aromatic olive oil and seasoned with something unexpected.
